Yay! Steph’s 3rd Cookie Advent Calendar! ^_^

When I received Steph’s invitation to join her Cookie Advent Calendar again this year, I immediately accepted. I always look forward to the delicious cookie recipes that everyone comes up with. If this is the first time you’re tuning in, you should definitely go back and check out all the cookies from the last two years as well!

If you don’t already know, I’m Stephanie from Munch I Munch currently located in Salt Lake City, UT. While both Steph and I have been a bit on the busier side this year, we still managed to keep in touch through our love for books, food, and television shows. This year, we discovered our mutual love for BBC shows, especially Sherlock!

Of course, cookies are one of the best snacks to munch on while watching your favorite television shows. hehe

This year, I thought I’d switch it up a little, while keeping with my dark chocolate and minty theme for the past two years. Since I was also craving Ginger Molasses Cookies, I decided to try a combination of it all.

These were exactly what I was looking for! My love for chocolate and mint with a hint of ginger and spices. Crispy on the outside and chewy in the center.

Serves: approximately 4 dozen cookies
Ingredients
  • 2 cups all-purpose flour
  • 2 tablespoons Dutch processed cocoa (or cocoa of your choice)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1 cup butter, softened
  • 1/2 cup granulated (white) sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 4 tablespoons molasses
  • 4 oz dark chocolate, melted
Instructions
  1. Preheat your oven to 350 degrees F and line your cookie sheet with parchment paper.
  2. Sift the flour, cocoa, baking powder, salt, ground ginger, cinnamon, and cloves in a small bowl.
  3. Cream the butter and sugars in large mixer bowl.
  4. Add the eggs individually, mixing until combined.
  5. Add the vanilla and peppermint extracts as well as the molasses and melted chocolate and mix until well combined.
  6. Add the flour and cocoa mixture in two parts and mix until just combined.
  7. Scoop a tablespoon of cookie dough and place on your parchment lined cookie sheet.
  8. Bake for approximately 8-10 minutes.
  9. Allow to cool for 2 minutes before removing to wire racks to cool completely.
