I “met” Shannon on Twitter when we connected over chats about the Toronto Underground Market. Unfortunately, I didn’t get to attend the same one as she did so I have yet to try out the delicious goodies that Shannon whips up as part of All Mine Caramels (some day!)

When she contacted me and offered to share her bacon vanilla wafer cookies with the Cookie Advent Calendar project, I didn’t hesitate to accept. BACON! In a COOKIE! What could be more perfect?

Hello folks I’m Shannon Hitchon the creator of All Mine Caramels a small business specializing in handcrafted caramels and caramel corn.

I make many different flavours of caramels and then dip them by hand in chocolate.  I also do caramel corns. One of the most popular flavours is my Slow Kick cayenne & bacon caramel corn.

Around my house we love bacon so much that I incorporated it into a cookie recipe. When I saw Stephanie’s post requesting cookie recipes for her holiday blog I thought these little treats would be perfect. My son and hubby go nuts for these cookies. They are a perfect snacking size and have a great little salty bacon hit at the end. The recipe makes around 80 cookies which seems like a lot but trust me you won’t be able to stop at just one.

yield: 80-90 cookies

bacon vanilla wafer cookies

ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup golden brown sugar, packed
  • 1 large egg
  • 1 tsp. vanilla
  • 1 1/3 cup all purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 cup double smoked bacon cooked and chopped

directions

  1. Place bacon in a cold pan and cook on med. till crisp, turning a few times. Place bacon on paper towel and pat off excess grease.
  2. Once cooled chop bacon until it resembles bacon bits and set aside.
  3. Preheat oven to 325 F.
  4. In a med. bowl cream butter, sugar and brown sugar with mixer for 1 minute. Add the egg and vanilla and continue mixing.
  5. Sift all dry ingredients into bowl and mix on low speed. Stir in bacon until evenly combined.
  6. Line a cookie sheet with parchment paper. Spoon Cookie dough into a pastry bag using a plain tip.
  7. Pipe the cookies onto the cookie sheet making them quarter sized. Bake for 11-13 minutes or until edges just turn golden.
  8. Cool on cookie sheet for 5 min. before placing on wire rack.
  9. Let cool completely before storing in an airtight container.

tip: to keep the parchment from lifting when you pipe, dab a bit of dough between the cookie sheet and the paper in each corner
