When I first connected with Amanda, it was because I admired her eye for design and her cool artistic abilities. I was happily surprised to find out that she loves to bake too! Having met her in person (finally!) I can say without a doubt that this girl is as happy, kind and fun in real life as she is online!

I love being part of this cookie swap, and I always pick a brand new recipe to try out. I’m really lucky that I live in a house full of bakers. This recipe calls for maraschino cherries, which is something most normal kitchens probably don’t have. (Unless you love topping sundaes with them or perhaps making Shirley Temples) I just went into the pantry and was able to choose from red or green cherries. If you don’t have any, they are super easy to find (Bulk Barn!) and essential for this cookie.

This cookie recipe was sitting in my Pinterest for awhile, and I was saving it for Christmas. It was worth the wait! The combination of chocolate and cherries melting into delicious shortbread is delicious. I hope you like these Cherry Chocolate Chip Shortbread Cookies as much as I do!

Serves: 24 cookies
Ingredients
  • 1 cup of unsalted butter, room temperature
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup maraschino cherries, chopped
  • 1 cup of milk chocolate chips
  • 1/2 tablespoon vanilla extract
Instructions
  1. Heat oven to 325 degrees F
  2. Cream together the butter and sugar
  3. In a separate bowl, mix the flour and salt together.
  4. Slowly add to the creamed butter until it forms clumps
  5. Mix in the cherries, chocolate and vanilla. Dry your cherries with a paper towel if they are wet with syrup.
  6. A stiff dough will form, and it will be a bit pink from the cherries. Roll into logs, and chill in the fridge for 1 hour.
  7. Take it out of the fridge and slice into ¼ thick pieces
  8. Bake in the oven for 20 minutes.
  9. Cool on a cooling rack.
  10. Enjoy!
