I recently met Giselle through Food Bloggers of Canada – she was one of the first people to respond to my call for new guest bloggers and I’m so glad she did! Giselle has a stunning blog, full of great healthy living tips and some really great looking recipes.

I’m also extra excited that she shared a dairy-free recipe with the Cookie Calendar. Personally, I’m not dairy free (I love my milk products!) but I have several friends who are lactose intolerant, so these cookies will be perfect for them!

Hey {New} Friends! How’s it goin?

I’m Giselle and I blog over at Diary of an ExSloth. I’m so excited to be part of Stephanie’s Christmas Advent Calendar this year because it combines two things I absolutely love: Christmas and Cookies. Today I’m going to be sharing some Dairy-Free Christmas Maple Cookies.

If you’ve never visited my blog before, here’s the Spark Notes version of my life. I grew up in Trinidad, moved to Canada for university, was the unhealthiest I’ve ever been for a couple of years, then turned my life around in 2013 and haven’t looked back since. Anyway, onto the cookies.

I have to admit, that I don’t really have a favourite Christmas cookie. Like I said, I’m from Trinidad and we don’t have chimneys there, so the whole cookies for Santa thing never picked up – at least not in my house.

My favourite cookies back then, were actually everyday, run of the mill, sugar cookies. I got them year round at my local bakery and they were second only to brownies. Yep, I’m a brownie girl – hello, birthday brownies – but those sugar cookies were a super, super close second. I actually used to get a couple sugar cookies with my brownies for an after brownie dessert. What can I say? I’ve always had an appreciation for baked goods 😉

So when I was brainstorming potential cookies for the advent calendar and I remembered those sugar cookies I haven’t had in 5+ years, I just knew I had to make them, or at least something similar. Who cares if they aren’t ‘Christmas Cookies’? Those cookies made me happy, and Christmas is about happiness, right? #seemslegit

Turns out, I actually had to revamp the cookies quite a bit. I don’t eat dairy anymore so the butter had to go. Plus, I like to healthify my baked goods a little so purely sugar cookies won’t cut it for me anymore. Plus, it is a Christmas cookie Advent calendar so I had to add some Christmas sprinkles.

So, after all that, I give you Dairy-Free, Christmas Sugar Maple Cookies. These beauties are dense and crumbly just like traditional sugar cookies but they’ve got less fats and are free of refined sugars.

Ingredients
  • 2 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • a pinch of salt
  • 1/2 cup coconut oil (solid)
  • 1 cup maple syrup
  • 1 egg
  • 2 tsp vanilla extract
  • 2 tbsp sprinkles
Instructions
  1. Whisk together flour, baking powder, baking soda, salt and sprinkles in a medium bowl
  2. In a large bowl, mix the coconut oil and maple syrup together using a hand mixer
  3. Slowly beat in the egg and vanilla extract
  4. Add the dry ingredients into the wet and mix until just combined
  5. Chill the dough for at least 30 minutes
  6. Once the dough is chilled, preheat the oven to 375F and line a baking sheet with parchment paper. If you don’t have parchment paper, leave the dish ungreased
  7. Spoon the dough out into the baking sheet, making sure to flatten them with your palm or fingertips. These cookies do not spread, so you don’t want to skip this step
  8. Bake for 8 – 10 minutes or until golden brown
  9. Allow to cool on baking sheet for a couple minutes then move the cookies to a rack
  10. Devour immediately or allow to cool and serve with milk
