Christine and I met when we were both Brand Ambassadors for Canadian Beef and it’s been a lot of fun getting to know her. She’s generous, energetic and is one of the most fun people I know on Twitter. Did I mention she lives on a farm…that produces BEEF?

But, I digress. This calendar is about cookies and Christine is back for a third year with another colourful creation!

It’s that time of the year again! Time to bake up a storm! With Christmas being mere weeks away, all the excitement in this house cannot be contained! I’ll admit we have been doing A LOT of baking!

My six year old desperately wanted me to include this Triple Chocolate Cookie recipe! Why? I’ve got so many “pretty”, “dainty”, “ornate”, “sophisticated”, “elaborately decorated” and “delightfully decadent” cookie recipes, but to be honest, the kid calls the shots in the kitchen. She’s my little sous-chef, and at six years old, she has a great palate! Hmmm…The other day, she consulted me about my turkey vegetable soup and told me that for her, it was “bland and the yellow zucchini made it bitter”. Noted.

I take Little One’s food critiques seriously, so when she insists that the Triple Chocolate Cookies are more festive and others will like them, I take her words to heart.

Serves: 3 dozen cookies
Ingredients
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1/2 cup Gay Lea butter
  • 1/2 cup Gay Lea sour cream
  • 1 teaspoon vanilla (you could use vanilla extract, but I used my homemade vanilla)
  • 1-3/4 cups all-purpose flour
  • 1/2 cup baking cocoa (I know it sounds like a lot!)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semisweet or milk chocolate chips
  • 1/2 cup Christmas-coloured M&Ms (or any green and red chocolate candy)
Instructions
  1. Cream butter and sugars together in a large mixing bowl until light and fluffy. Beat in egg, sour cream and vanilla. Combine dry ingredients.
  2. Gradually add to the creamed mixture. Stir in chips & Christmas-coloured M&Ms.
  3. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets.
  4. Bake at 350° for 12-15 minutes or until set.
  5. Cool for 2 minutes before removing to wire racks to cool completely.
Notes
The Christmas-coloured M&Ms obviously crack and melt a wee bit when in a hot oven. If you don’t like the imperfect look of the cracked and melted M&Ms, you can add them as soon as you remove the cookies from the oven. While the cookies are still hot, you can insert some red and green M&Ms into the cookies and decorate their surface (instead of mixing them into the batter).

When she’s not working with clients and helping them with their social media campaigns, she’s either running after runaway cattle or making sumptuous meals and bento lunches. She’s a former English teacher with a mission to enjoy time with family to the fullest. Though Christine admittedly doesn’t eat many sweets, her love for baking is right up there with her love for cooking and entertaining.
